{"id":1671,"date":"2025-03-16T12:43:55","date_gmt":"2025-03-16T11:43:55","guid":{"rendered":"https:\/\/art-e-gusto.ch\/?p=1671"},"modified":"2025-03-16T12:43:57","modified_gmt":"2025-03-16T11:43:57","slug":"tomaten-relish-mit-basilikum-panna-cotta","status":"publish","type":"post","link":"https:\/\/art-e-gusto.ch\/it\/tomaten-relish-mit-basilikum-panna-cotta\/","title":{"rendered":"Pomodoro Artegusto con panna cotta al basilico"},"content":{"rendered":"<p style=\"color:#ed425c; font-weight:800\"><img decoding=\"async\" src=\"https:\/\/art-e-gusto.ch\/wp-content\/uploads\/2023\/06\/clock-1.png\" width=\"30px\" style=\"vertical-align: middle; margin-right:10px\">70 MINUTI<\/p>\n\n\n\n<p class=\"has-text-color has-medium-font-size\" style=\"color:#ed425c\"><strong>Per il giovane chef<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Difficolt\u00e0: 3 su 5<\/li>\n<\/ul>\n\n\n\n<p class=\"has-text-color has-medium-font-size\" style=\"color:#ed425c\"><br><strong>Ingredienti<\/strong> <strong>per 4 persone<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>300 g di pomodori Artegusto<\/li>\n\n\n\n<li>100 g di fragole<\/li>\n\n\n\n<li>1 cipolla rossa piccola<\/li>\n\n\n\n<li>25 g di zucchero di canna<\/li>\n\n\n\n<li>100 ml di aceto balsamico<\/li>\n\n\n\n<li>5 asparagi<\/li>\n\n\n\n<li>100 g di mirtilli<\/li>\n\n\n\n<li>2 mazzetti di basilico<\/li>\n\n\n\n<li>5 fogli di gelatina<\/li>\n\n\n\n<li>500 ml di panna<\/li>\n\n\n\n<li>Il sale<\/li>\n\n\n\n<li>Pepe del mulino<\/li>\n\n\n\n<li>Olio per gli stampi<\/li>\n<\/ul>\n\n\n\n<p><\/p>\n\n\n\n<p class=\"has-text-color has-medium-font-size\" style=\"color:#ed425c\"><strong>Preparazione<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Lavare, asciugare e tritare il basilico. Ammollare la gelatina in acqua fredda. Scaldare la panna, aggiungere il basilico e cuocere a fuoco lento per circa 5 minuti. <\/li>\n\n\n\n<li>Frullare fino a ottenere un composto omogeneo e passare al setaccio. Aggiungere la gelatina strizzata, mescolare per scioglierla e condire con sale e pepe. Rivestire gli stampi da porzione con olio e versare la crema al basilico. Raffreddare per almeno 3 ore (preferibilmente per tutta la notte).<\/li>\n\n\n\n<li>Sbollentare gli asparagi in una padella larga in acqua salata per circa 6 minuti e metterli da parte.<\/li>\n\n\n\n<li>Lavare, asciugare e tagliare i pomodori Artegusto in ottavi. Sbucciare e tagliare a cubetti sottili la cipolla rossa. Tagliare le fragole a cubetti. Sciogliere lo zucchero di canna in una padella a fuoco basso, deglassare con l'aceto balsamico, aggiungere la cipolla tagliata a dadini e cuocere a fuoco lento per circa 6 minuti. Aggiungere i pomodori Artegusto e cuocere per circa 3 minuti. Aggiungere quindi le fragole tagliate a dadini e condire con sale e pepe a piacere.<\/li>\n\n\n\n<li>Infine, sformare la panna cotta al basilico su un piatto (se necessario, immergere brevemente gli stampi in acqua calda) e disporre all'esterno gli asparagi, il relish e i mirtilli.
